I forgot!!! this is another Canadian delicacy!!

Just an unsmoked bacon rolled in corn meal (but historically was pea meal and the name stuck!). It's basically pork loin or 'back bacon'

We’ve never made them until we got the ATK cookbook. 3 years later, these are my favorite recipes. The tamales with two ties are pulled pork and the one tie is ground beef. We also used our own guajillo chiles we dried in the fall for the sauce.

@EbayMafia - I ate everything except for one piece of french toast that I shared with my wife. You can see her omelette, English muffin, and coffee are also on the table. I obviously didn’t need anything from her order!

Boneless Wagyu beef ribs were on sale at the market for a very reasonable price. Messed up the first couple trying to bake them in the oven. 45 minutes on high pressure in the Instant Pot with slow pressure release turned out to be a much better option. Rubbed with Kinder’s Prime Steak Seasoning and Cooked in Spicy Beef Broth. Stubb’s original BBQ sauce poured on immediately after cooking. On a soft sandwich role this was as good as any BBQ sandwich I’ve ever had.

If I don’t get to it first, I ran across a recipe for someone to try. Hot dog burnt ends. It’s an oven recipe but I’ll do it in the smoker next time.
