First attempt at home made hot sauce.
Grew my own tobasco plants...fermented for 2 weeks.
Very similar taste to the original but missing like..a sour note?
Maybe if I barrel aged for 3yrs?? lol!!!
Might try playing with 1 bottle..like add liquid smoke and citric acid???
Maybe different brine to vinegar ratio??..Next year!!!

Recipe was to use the brine (about 4 cups) and 1 cup vinegar.
Bring to boil..simmer for 15min
Blend and strain solids...bango done!!

Yeah...maybe less brine and more vinegar...could also be that not all my peppers were red yet....

Notes for next year....and now I know 3 plants makes 3 bottles...mayne more plants next year so I can make multiple batches to play with!!

1st run is almost always to follow instructions...all after are tweaking!

Only figured liquid smoke because the real thing is barrel aged 3yrs...gotta add some smoke or something...no idea toast levels of the barrels though....

It looks really good. I’d drink that up for sure. It reminds me of the Steak and Shake hot sauce that was basically bottles of those peppers filled with vinegar, which by the way they no longer have.

My wife thinks I'm nuts....I like sweet and savory flavors combined.

Homemade waffles topped with shredded cheese. Sautéed: garlic, onions, shallots, corn nibblets. Salt, pepper, Tabasco and drizzled honey.

I bought a can of Wendy's chili today as Publix had it on BOGO.

I was surprised. It's one of the better canned chilis I've purchased. All I had to add was a little salt and pepper.

Quick and easy for a chili cheese hot dog.




They have a No Beans version, but like Rhode Islanders, I like my chili with beans.
