You do...I actually had to do that today. I did it fast though to minimize heat loss. Next time I will just start with more charcoal than I did today.

Char siu after 24hr marinade and ~1hr roast. Half of the ~6.5lbs (3kgs for Canadians/row) we made.

Tonight over rice with stir fry veggies. Some will later go into steamed pork buns (will prep some additional filling). None will go to waste.

No food coloring so not bright red.

Cheat meal on a workout day?... Heaven forbid!

After a hard workout, one tends to lean towards a healthy meal to aid in muscle recovery. While my brain was trying to make a decision between medium rare sirloin, spaghetti, brussels sprouts... or ... salmon, rice, asparagus... or ... etc, my gut took control of the situation and screamed out, FRIED CHICKEN!

So while at the grocery this evening, other than potato salad, I also GRABBED 3 thighs and 2 legs at the deli.

Sichuan and red chilies wok fried chicken (thin coat crispy batter) with broccoli over rice. Then homemade steamed pork buns (made 20) using some of the the char siu (with the rest of the filling made today).
