Did I miss the recipe? I pretty much only bake zucchini or steam baby zucchini, so I’m interested in alternatives.

I like to marinate zucchini (honey & garlic veggie marinade) and then bake.

I’ll dig it out of the archives and post it tomorrow @steveinthecity.

So you don’t get your hopes up, it’s hamburger helper without paying the man. Plus fresh zucchini.

Gotta love Costco.

That's funny because I originally wrote Coscto-sized and then changed it to family-sized before posting. In the very early days of Costco (I think our Portland area Costco was store #2 or #3) you could actually find large jars of pickled sausages and I believe also pickled pigs feet. Can't find those things at Costco anymore but we have a pretty large assortment of Mexican Supermarkets where the pigs feet are readily available in large quantities.

@Bronte They were.

@Byrdibyrd Totally agree. I'm not as good at ribs anyway but they're decent.
I also make my own rub and we don't even use sauce in my house. It's good without. In fact, anyone eating my brisket for the first time there is a rule. You may use sauce but the first bite has to be without. Some just go without afterward.

And thank you both.

The style of barbecue around here is Santa Maria style, which has as its centerpiece a tri-tip with a rub rather than sauce, so I think a good rub for a barbecue is fantastic! I'm not saying sauce is overrated, I'm just saying that a rub can be just as good.

Here's one for @BrianGreensnips and others looking to be healthier:
Costco Rotisserie Chickens are all the same price so my wife buys the biggest one. That's a mistake since they are all cooked the same amount of time. She's learned now to buy the smallest one for fuller cooking. Anyway, wanted to do something with this big ass under-cooked chicken in my fridge. I cut the breast into slices and fried them a bit in a little Sesame Oil and some dry Parmesan cheese. Very simple, took 5 minutes. Tastes really good a la carte but would be better on a salad, Caesar or otherwise.

I have quite a bit of beets as backup but believe best in moderation.

Dominoes has a guarantee if you don't get the pizza in 2 minutes curbside the next medium 2 topping is free. Technically you still have to pay tax. So that is my dinner. A 1.07$ pizza.... and to top it off they were late again. So I get another "free" pizza... granted their pizza isn't great, at 1$ a pie it's edible.....
