OT; What are you eating or cooking, part 216960

@HeinzDad what hot sauce did you add?

We almost always make our corn tortillas from scratch. The masa used makes a big difference in appearance (and some difference in taste).

We rarely use store bought corn tortillas. Flour ones, yes (and some are very good).

Corn tortillas can be amazing, but the best I've had are the home-made ones at a local Mexican restaurant in the area where I always eat too much food whenever I go there. Absolutely delicious. Store-bought ones are just... nasty.

@DrWatson, flour. I didn’t know what a corn tortilla was until I moved out.

@Davethebrave, I like hot sauce but I just stick with salsa for these. I won’t mess with these to much as it’s been the same taste for 35 years.

Did not make it to Pappadeaux as planned. We ended up at some grassy lot with picnic benches and food trucks all stationed around a permanent outdoor covered bar. Had Baja style shrimp cocktail and seafood ceviche on crackers with some blackberry and whiskey lemonade cocktail in a mason jar. 70 degrees and sunny, I could have sat there all afternoon eating and drinking.

Good eye and yes.

The main is a bit of a fusion bulgogi-style dish but I use shabu shabu and serve with mixed veggies (frozen veggies, wok stir fried after steam thawing to release most of the water).

Similar flavor profile to bulgogi but let’s say I don’t reference any recipes. Only my dish had the sriracha added lol.

Edit: what I find really funny is that both my kids (3 and 1) love kimchi despite my heavy-hand when it comes to spice. For most things I now leave heat-spice as an add-on. For kimchi you really want flavors to absorb (we don’t like fresher kimchi - we prefer more fermented flavor). So we tend to spice it to our taste by default.

The kids still love it.

Not really what I’m eating at this moment (I keep my breakfasts simple) but food related.

We have an unusually extensive spice rack (about 60 dry spices, 10+ hot sauces, and a large range of oils, extracts etc). We try to use fresh where it makes sense and only use natural food coloring. Our fresh herb supply is grown in our yard, etc etc.

Living in a place with four seasons, however, means we only have about half a year of fresh herbs.

Recent pickup has been a great addition. It allows us to grow 27 plants at a time from seedlings. I then rotate into larger pots (with dedicated high-quality grow light) and in total can manage about 36 plants at a time. We will have them in parallel with outside planters this summer.

It is nothing like the setups many have but for a convenient (if pricey) source of fresh herbs year-round, it is great.

Especially for plants that support sustained harvesting (like basil).

Nice. My indoor basil never lasts more than a few months.

That isn’t so bad. We have used ours moderately but only one month of harvesting so far. I will be very happy to get two or three months of light harvest use. Mostly for pasta sauce and thai cuisine for us. I have more basil in seedling stage so the idea is to maintain a rotation.

The apple sauce and pudding were the best part... Bronte private msg quote post Address this user
So my brother is smoking pork for pulled pork, but it's his side dish that is making my mouth water.

Potatoes, minced garlic, onions, pepper salt and butter. All in aluminum foil on top of the coals for 40 minutes.

Test run of the Ooni (made 4 smaller pizzas but forgot to take pictures until they were nearly gone)…

Simple as heck. San Marzano tomatoes, 00 flour homemade dough with 24 hr rise, salt, olive oil, basil and buffalo mozzarella. Oh and 900 degrees in the Ooni, of course.

@Bronte thanks for the idea!

Pasteurized cheese is worse than whatever meat product it is?

No, that meat is definitely the greater sin.

But some sinning is good for the soul.

I made a delicious steak salad to take to work. I used the pre-cooked steak from Costco. I cut up about 4-5 oz and then heat it before adding it to the salad.

Admittedly, I get tired of the pepper half way thru and eat the stuffing.

When my brother lived in the dorms he says that they saw the cafeteria being restocked one night. He claims the boxes were labeled "Grade D but edible".

@HeinzDad I love stuffed peppers but I have never had cheese on top. My mom who passed away used to cook it up with the stuffed cabbage. I now have my wife and daughter doing it that way too.
