@esaravo Kinda looks like that recipe you sent me some time ago. Definitely a delicious standby meal. I've prepared it many times since. ![]() |

Thai coconut curry with chicken. This is one of those times where I prepped both a “medium” and “high” spice version. ![]() |

@Davethebrave Leave out the coconut and I'm sold. But the spicier the better. I really don't care much for coconut except an Almond Joy. But candy bars today just don't compare to what was manufactured back in the '70s. |

Quote:Originally Posted by Pre_Coder Fair enough. I actually don’t like coconut very much either but mostly the aftertaste. In this dish it is very subtle. Almost a substitute for any other cream really. You can substitute with a tomato based sauce and yogurt and get pretty close too. I actually often substitute greek yogurt for a lot of cream type bases. Generally healthier if you understand/accommodate the calories. |

@Puckster never tried it, but I could certainly dig in. I've been to Louisiana only once (Lafayette), back in 1995 to teach a computer class. My first night, the school took me to a Cajun restaurant that had neon lights. I can't remember what I ate. My second night there, they took me to an old part of town, and we ate at a hole-in-the-wall diner. I had,... cow tounge with brown gravy and onions, lima beans, steamed squash, and for dessert was a plate of banana pudding. I remember this meal because the old school Cajuns know how to feed you. |

@Pre_Coder I don't like shellfish is the main reason I don't eat it. I grew up in the Panhandle of Texas but I live in East Texas now. Lots of Cajun influence in the food down here so I wasn't around it much growing up. Minus the seafood versions, I like Cajun food. My wife makes a pretty dang good chicken gumbo and I absolutely love boudin (look it up if you don't know). Even better is boudin balls. Man, I want some now. | ||

I'm having salmon patties and linguine for dinner,.. for the umpteenth time. (1) since I found out how make the patties the way my Mother did, I've been eating it like there is no tomorrow. (2) since I discovered linguine years ago, I don't cook spaghetti anymore. (3) I obviously take the vertebrae out and toss in the trash. But the skin (which can contain toxins), and other stuff in the can, I put on a plate and give to my outside male cat. Afterwards, he roams the neighborhood and shags the females. (4) I prepare the salmon mixture early and place in the fridge so it can solidify. After a few beers tonight, this is gonna be so good. |
