For a mayo dip you might want to try adding sweetened condensed milk with mayo and a touch of lemon juice. It tastes awesome with bacon wrapped shrimp | ||

Your terminology was fine. If you say “from scratch” then it implies all critical elements were from their most fundamental (generally available) form. You took two key elements of smoked cheese - the cheese and “smoke” and transformed them into a new product “smoked cheese.” You did this at home. It was therefore homemade smoked cheese.
