Was a “five burner meal” at some points. Something I usually try to avoid as the fan at “high” sounds like a 747 throttling up…

For a mayo dip you might want to try adding sweetened condensed milk with mayo and a touch of lemon juice. It tastes awesome with bacon wrapped shrimp

Thanks. We use sweetened condensed milk (sometimes) but rarely if not cooked down… and even cooked down, I avoid.

Lactose and my gut don’t mix well.

Tonight we just did sriracha and mayo with a touch of worch and some lemon.

this was my first attempt at smoking!! started at 3hrs with apple wood....was a little too much smoke? will try maybe 2 hours next time

I did just normal cheddar, 10yr old cheddar and gouda....the 10yr old was ok..might do 5yr old next time - can't remember what the wife buys but I'm kind of trying to get close to that - 10yr was close

Your terminology was fine. If you say “from scratch” then it implies all critical elements were from their most fundamental (generally available) form.

You took two key elements of smoked cheese - the cheese and “smoke” and transformed them into a new product “smoked cheese.” You did this at home. It was therefore homemade smoked cheese.

We had a guy lease part of our estate for a few bee hives that he would tend. One day he just quit showing up and we had no way of tracking him down as his information was no longer correct. I had to find some one to come and rescue the honey bees.

Added a slice of real cheese
Then 4 eggs cooked over-easy dumped on top
Butter, salt, and pepper
